I peperoni ripieni sono una di quelle ricette complete e gustose. Impossibile non prepararle almeno una volta nella stagione estiva, quando i peperoni sono belli colorati ed esposti nelle bancarelle del mercato.

Laviamo per bene i peperoni, le zucchine ed i pomodori.
Tagliamo i peperoni poco sopra la metà, in modo da dividere la base e la parte superiore. Puliamo la parte interna rimuivendo i filamenti ed i semini. Teniamo da parte.
Tagliamo la parte superiore a piccoli pezzi e raccogliamo in una ciotola.
Tagliamo la zucchina a rondelle e poi in 4 pezzi. Per ultimo tagliamo i pomodorini in 4 pezzi.
Uniamo tutte le verdure nella ciotola ed aggiustiamo di sale e pepe.
Aggiungiamo anche le olive ed il formaggio a pezzettini. Mescoliamo per bene il tutto.
Prepariamo una pirofila e sistemiamo sopra i peperoni. Aggiustiamo di sale.
Riempiamo i peperoni con le verdure precedentemente preparate. Riempiamo fuoriuscendo anche un poco dai bordi, poichè in cottura restringerà leggermente il condimento.
Aggiungiamo un generoso filo di olio extravergine di oliva ed inforniamo in forno ben caldo a 200°. Facciamo cuocere per 40 minuti.
Sforniamo e serviamo caldo oppure tiepido.
