Il plumcake lime e cocco con i suoi gusti freschi e perfettamente equilibrati è un dolce facilissimo da preparare.
Con la sua freschezza è perfetto come dolce da colazione, ma anche come dolce da fine pasto. Basterà accompagnare il plumcake con una cucchiaiata di yogurt greco e porterati in tavola un dolcetto perfetto per terminare un pasto.
Laviamo accuratamente i lime e grattugiamone la buccia.
Uniamo zucchero e buccia grattugiata di lime in una ciotola. Teniamo da parte un poco di buccia grattugiata.
Mescoliamo i due ingredienti.
Aggiungiamo le uova ed iniziamo a montare con una frusta.
Uniamo a questo punto l'olio di semi, il latte ed il succo di lime (circa 40 ml).
Montiamo ancora, quindi uniamo la farina di cocco. Incorporiamo per bene prima di procedere con l'aggiunta di farina 00 e lievito per dolci.
Otteniamo un composto ben liscio ed omogeneo.
Trasferiamo il composto in uno stampo da plumcake precedentemente imburrato ed infarinato.
Inforniamo in forno caldo a 170° ventilato (180° statico) e lasciamo cuocere per 35 minuti.
Sforniamo e lasciamo raffreddare completamente prima di cospargere la superficie con zucchero a velo e la restante scorza di lime.
